Chinese Fried Rice Recipe
Ingredients:
- 2 cups cooked rice (preferably leftover and cooled)
- 2 eggs, lightly beaten
- 1 cup mixed vegetables (peas, carrots, corn, diced bell peppers, etc.)
- 1/2 cup diced onion
- 2-3 cloves garlic, minced
- 2-3 tablespoons soy sauce (adjust to taste)
- 1 tablespoon oyster sauce (optional, for extra flavor)
- 1 teaspoon sesame oil
- 2-3 tablespoons cooking oil (vegetable or sesame oil)
- Salt and pepper to taste
- Spring onions (scallions) for garnish (optional)
Instructions:
Prepare the Rice:
- If you don’t have leftover rice, cook the rice according to package instructions and allow it to cool completely. Cold rice works best for fried rice as it’s less sticky.
Cook the Eggs:
- Heat 1 tablespoon of oil in a large skillet or wok over medium heat. Pour in the beaten eggs and scramble them until fully cooked. Remove from the pan and set aside.
Stir-fry Vegetables:
- In the same skillet, add another tablespoon of oil if needed. Add minced garlic and diced onion. Stir-fry for about 1-2 minutes until onions are translucent and garlic is fragrant.
Combine Ingredients:
- Add the mixed vegetables to the skillet and stir-fry for another 2-3 minutes until they are tender but still crisp.
Add Rice and Sauce:
- Increase the heat to medium-high. Add the cooked rice to the skillet. Stir-fry everything together, breaking up any clumps of rice.
Season the Fried Rice:
- Drizzle soy sauce and oyster sauce over the rice. Add sesame oil for extra flavor. Stir well to combine all the ingredients evenly. Taste and adjust seasoning with salt and pepper if needed.
Add Scrambled Eggs:
- Return the scrambled eggs to the skillet with the rice and vegetables. Stir-fry for another 1-2 minutes until everything is heated through.
Serve:
- Remove from heat. Garnish with chopped spring onions if desired. Serve hot as a main dish or as a side dish with your favorite Chinese entrees
