Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Cooked pasta or rice, for serving

Instructions:

  1. Prepare the Shrimp:

    • In a large skillet, melt 2 tablespoons of butter over medium-high heat.
    • Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Cook the Shrimp:

    • Add the shrimp to the skillet and cook for 2-3 minutes per side, until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. Make the Sauce:

    • In the same skillet, add the remaining 2 tablespoons of butter.
    • Pour in the chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
    • Stir in the heavy cream and let the mixture simmer for about 2-3 minutes until slightly thickened.
  4. Combine and Finish:

    • Add the grated Parmesan cheese to the sauce and stir until melted and smooth.
    • Stir in the lemon juice, lemon zest, and red pepper flakes (if using).
    • Season with salt and pepper to taste.
  5. Return the Shrimp:

    • Return the cooked shrimp to the skillet and toss them gently in the creamy sauce to coat.
    • Let everything heat through for another minute or so.
  6. Serve:

    • Serve the creamy shrimp scampi over cooked pasta or rice.
    • Garnish with chopped fresh parsley for a pop of color and freshness.
