Malai Boti Roll Recipe

 Malai Boti Roll is a popular Pakistani street food that features tender and creamy chunks of marinated chicken wrapped in a paratha (flatbread) with fresh vegetables and sauces. Here’s how you can make Malai Boti Roll at home:

Ingredients:

For the Malai Boti:

  • 500 grams boneless chicken, cut into bite-sized pieces
  • 1/2 cup thick yogurt (Greek yogurt works well)
  • 1/2 cup fresh cream (malai)
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 tablespoon roasted gram flour (besan)
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon ground cardamom
  • Salt to taste
  • 2 tablespoons vegetable oil

For the Roll:

  • Parathas or rotis (flatbreads), warmed
  • Thinly sliced onions
  • Thinly sliced tomatoes
  • Thinly sliced cucumber
  • Fresh lettuce leaves or cabbage, shredded
  • Mint chutney or green chutney
  • Tamarind chutney or ketchup (optional)
  • Lemon wedges (optional)
  • Chaat masala (optional, for sprinkling)

Instructions:

  1. Marinate the Chicken:

    • In a large bowl, combine yogurt, fresh cream, ginger-garlic paste, lemon juice, roasted gram flour, ground coriander, ground cumin, garam masala, turmeric powder, red chili powder, black pepper, ground cardamom, salt, and vegetable oil. Mix well to form a smooth marinade.
    • Add the chicken pieces to the marinade and mix until all the chicken is well coated. Cover the bowl and refrigerate for at least 2 hours, or ideally overnight, to allow the flavors to meld.
  2. Cook the Malai Boti:

    • Heat a grill pan or skillet over medium-high heat. You can also use a regular non-stick pan.
    • Thread the marinated chicken pieces onto skewers if desired, or simply place them directly on the hot grill or pan.
    • Cook the chicken for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has a nice char on the edges. You can baste the chicken with a little oil or butter while cooking to keep it moist.
  3. Assemble the Roll:

    • Warm the parathas or rotis on a skillet or in the microwave until soft and pliable.
    • Place a warmed paratha or roti on a plate or clean surface.
    • Arrange some shredded lettuce or cabbage leaves in the center of the paratha.
    • Add a few pieces of cooked Malai Boti chicken on top of the lettuce.
    • Top with thinly sliced onions, tomatoes, and cucumbers.
    • Drizzle with mint chutney or green chutney, and optionally tamarind chutney or ketchup for added flavor.
    • Squeeze a little lemon juice over the filling, if desired, and sprinkle with chaat masala for extra tanginess.
  4. Roll it Up:

    • Roll the paratha tightly around the filling, tucking in the sides as you go.
    • Secure the roll with foil or parchment paper if needed to hold its shape.
    • Repeat with the remaining ingredients to make more rolls.
  5. Serve:

    • Serve the Malai Boti Rolls immediately while warm, optionally with additional chutneys or sauces on the side.

Tips:

  • You can customize the filling by adding other vegetables or sauces according to your preference.
  • If you don’t have parathas or rotis, you can use store-bought wraps or tortillas as an alternative.
  • Adjust the spiciness of the marinade and fillings to suit your taste.
