Recipe for pancakes:

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk (you can use whole milk for richer pancakes)
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)
  • Butter or oil for cooking

Instructions:

  1. Prepare the Batter:

    • In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  2. Mix Wet Ingredients:

    • In another bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using) until smooth.
  3. Combine Dry and Wet Ingredients:

    • Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if there are a few lumps; overmixing can make the pancakes tough.
  4. Heat the Pan:

    • Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil and spread it evenly across the surface.
  5. Cook the Pancakes:

    • Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.
  6. Flip and Cook:

    • Carefully flip the pancakes with a spatula and cook until golden brown on the other side, about 1-2 minutes more.
  7. Serve:

    • Transfer the pancakes to a plate and keep warm. Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
  8. Serve Warm:

    • Serve the pancakes warm with maple syrup, honey, fresh fruit, whipped cream, or any toppings of your choice.

This recipe makes about 8-10 pancakes, depending on the size. Adjust the sweetness and thickness of the batter to your liking.
