Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk (you can use whole milk for richer pancakes)
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract (optional)
- Butter or oil for cooking
Instructions:
Prepare the Batter:
- In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Mix Wet Ingredients:
- In another bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using) until smooth.
Combine Dry and Wet Ingredients:
- Pour the wet ingredients into the dry ingredients and stir until just combined. It's okay if there are a few lumps; overmixing can make the pancakes tough.
Heat the Pan:
- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil and spread it evenly across the surface.
Cook the Pancakes:
- Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake and the edges look set, about 2-3 minutes.
Flip and Cook:
- Carefully flip the pancakes with a spatula and cook until golden brown on the other side, about 1-2 minutes more.
Serve:
- Transfer the pancakes to a plate and keep warm. Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
Serve Warm:
- Serve the pancakes warm with maple syrup, honey, fresh fruit, whipped cream, or any toppings of your choice.
This recipe makes about 8-10 pancakes, depending on the size. Adjust the sweetness and thickness of the batter to your liking.
